Wagyu (pronounced ‘wag-you’) is a breed of cattle native
and unique in their genetics to Japan. The Japanese word
Wagyu can be translated to mean Japanese beef – as
‘wa’ means Japanese and ‘gyu’ means beef. These
cattle are vigilantly guarded by Japanese farmers, the
animals have inherited the genetics from their ancestors and
farmers see it as their duty to protect this gift for future
generations.
David Blackmore Wagyu is regarded world wide as the best
wagyu produced outside of Japan. Blackmore Holdings now have
created a Fullblood Wagyu herd of 2,000. They consistently
achieve a marble score of 9 as certified by AusMeat which is
Australia’s highest meat grading score.
